This Taco Salad is one of my favorite ‘go-to’ meals for lunch or dinner (or breakfast for that matter!).  And..the rest of my family likes it too.  BONUS POINTS!

Fast + Easy = Good

It only takes a few minutes to cook up some lean ground beef + taco seasoning + water.  Rather than spoon the meat into a taco shell or tortilla, add it on top of your favorite salad ingredients to create a fantastic low-carb meal.

As you can see from the photo above, my salad contains taco meat, lettuce, cucumber, fresh mushrooms, radishes, chopped tomato, avocado and just a little bit of shredded Mexican cheese blend.

Topped off with some Italian dressing (store-bought or homemade) you have a great meal!

On the move

Leftover taco meat stores well in a covered container in the refrigerator.  You can take some with you to work and reheat it in the microwave for a quick and easy lunch.
